I want to make the most of the contrast between the maple and cherry. I have found water-based finishes slightly darkens/yellows the maple which I don't want to happen. I am thinking of bleaching the curly maple so that the water-based finishes will not affect the whiteness as it did before without bleaching.lacquer does not darken maple much--any finish will darkin any wood.I have had good results with Oxigen bleach. You have one thing going for you and that is cherry will get darker with age. I would go ahead and finish your table with out bleaching---the natural contrast is plenty.

: Any advice about using bleached woods with water-based finishes? Am I doing the right approach in using bleach to preserve the whiteness of the maple against the cherry?
